winemaking
Once the optimal phenolic ripeness is reached, the grapes are harvested, destemmed and gently pressed. Fermentation with maceration takes place in steel containers at a controlled temperature of 22 – 24 ° C for about three weeks, carrying out punching down and pumping over to extract the greatest amount of substances contained in the skin. After racking and malolactic fermentation, the wine is aged for 18 months in new French oak barriques and then 6 months in the bottle. Low yields, on average 45 quintals per hectare. Organic management of the vineyards.
organoleptic characteristics
Wine with a dark red color with blue-violet reflections. The very ripe grapes generate a very intense and persistent flavor. Dense nose of small concentrated dark berries, cocoa, pepper and other spices. Authoritative on the palate, of great phenolic maturity, soft and round but with good freshness.
This wine elegantly accompanies important dishes based on red meats and game.
